Ingredients:


  • 1 tablespoon butter or ghee
  • 1 chicken breast
  • salt, to taste
  • 1 head of broccoli, chopped into small florets and stem diced
  • 2 handfuls of baby spinach leaves, roughly chopped
  • 1 handful of snow peas (mangetout), ends trimmed and halved
  • 1 handful of activated macadamia nuts, roughly chopped
  • drizzle of Honey Wholegrain Mustard Dressing, to serve

Directions

Preheat the oven to 170°C (325°F).

  1. Melt the butter in a pan over a medium heat.
  2. Season the chicken breast with pepper, then fry in the pan until brown on both sides and cooked through. Set aside to cool.
  3. While the chicken is cooling, mix the broccoli, spinach, snow peas and macadamia nuts in a bowl.
  4. Slice the chicken and mix through the salad.
  5. Drizzle with the Honey Wholegrain Mustard Dressing and serve.
